Final Review // Simple Truth 🌱

I love love LOVE the products, the packaging, and the fact that Simple Truth is earth friendly. 💚

These products are not only healthy but super tasty too! Will 💯 repurchase.

It’s really difficult to choose a fave but I was really impressed by the variety of vegan options, like the noodles (which cook in a flash!). Ed’s favourite product is the Vinegar Household Cleaner which we’ve been using for years (PS. Ed loves to clean 😄).

Other positives about Simple Truth:

✅ Affordable
✅ Readily available at Checkers
✅ Expansive range that caters for a variety of diets
✅ Free from MSG, artificial colours, flavours, and sweeteners
✅ Makes it easy to choose healthier alternatives

RECIPE // Simple Smokey BBQ Tofu Noodles

Simple ingredients. Great flavour. Simple Truth. 👌🏼👌🏼👌🏼

You need:

Simple Truth Turmeric Noodles
Simple Truth Smokey BBQ Sauce
Simple Truth Cold-pressed Grapeseed Oil
Onions
Mushrooms
Peppers of choice
Broccoli
Garlic
Salt
Pepper
Mixed herbs
Tofu (300 g)
Corn flour (90 ml)
Soy sauce (30 ml)

To make:

1. Cook the noodles in a pot of boiling water as per packet instructions and set aside.

2. Fry the onions in a pan with some oil, garlic, salt, pepper, and herbs for a few minutes.

3. Add the mushrooms and fry for a few minutes.

4. Add the peppers and fry for a few minutes.

5. Add more oil, salt, pepper, and herbs as needed.

6. Add the broccoli (or fry separately) and fry for a few minutes.

7. Set the vegetables aside.

8. Press tofu until firm, cut into cubes. Place cubes in a mixing bowl and coat lightly in corn flour. Add the soy sauce and toss lightly with a spoon until the cubes are just coated in the mix.

9. Fry coated tofu in some oil until lightly browned, turning after a few minutes on each side.

10. Coat tofu in some Simple Truth Smokey BBQ Sauce.

11. Add all the fried vegetables and the noodles to the tofu and fry for a few minutes while mixing together.

Note:
• Where unspecified, amounts as per personal choice.
• Serve warm.

RECIPE // Tasty Cheese & Herb Muffins

*I baked these in an air fryer* 🙌🏼

You need:

250 g Cake flour
10 ml Baking powder
2.5 ml Salt
2.5 ml Coarsely ground black pepper
40 g Cheddar cheese (grated)
3 X-large Eggs
105 ml Milk
50 ml Olive oil
10 g Flat leaf parsley (finely chopped)
5 g Fresh thyme leaves
100 g Feta cheese (cubed or broken into small chunks)
50 g Cream cheese

To make:

1. Preheat the oven to 180°C. If baking in an air fryer, you do not need to preheat.

2. Spray a 12 space muffin pan with non-stick spray.

3. Mix the flour, baking powder, cheddar cheese, salt and pepper together into a mixing bowl.

4. Stir the eggs, milk, oil and herbs together in a separate bowl, then add to the dry ingredients and lightly mix until just combined.

5. Half fill the muffin pan hollows with the mixture, then place some of the feta and cream cheese on top of the mixture.

6. Cover with the remaining mixture.

7. Place in the oven for 15-20 minutes or until a skewer/knife comes out clean. If baking in an air fryer, bake for 10-15 minutes at 180°C or 15-20 minutes at 160°C.

8. Leave the muffins to cool in the tin for 5 minutes, then remove and cool on a wire rack for a few minutes before serving.

Notes:

• Makes about 12 large muffins.
• Can be served warm or cold.
• Can be frozen.
• Can be baked in an air fryer.
• Can be baked in silicone cups.
• You could change up the recipe by using different cheeses and herbs.
• Some of the cheese can be substituted with dried tomatoes or blanched spinach.
• You could sprinkle some pumpkin seeds on top before baking to add a different texture and flavour.
• Depending on the moistness of the added ingredients, always adjust amount of milk in batter.
